Swine Scrumpy

4.5kg English dessert apples (I fancy cox, best case)
1kg cooking apples
220g raisins
200g Danish smoked back, chopped roughly
SB24 cider yeast (instead of the recommended champagne yeast - max abv. 18% is not for me in a medium-dry cider)
One tin white wine concentrate
1tsp pectolase
One B1 nutrient tablet
