Begin primary fermentation on peach and lychee wine

From lychee and peach wine recipe. Pectolase had started breaking down the fruit, which floated to the top, leaving the lychees slightly browned. Added Gervin GV3 yeast as per the recipe. Vigourous fermentation began within five minutes! This will be left for two weeks, before transfer to a demijohn for secondary fermentation. It smells fantastic.
